This plant of the legume family has an amazing property - it does not accumulate toxins, so it can be grown anywhere, in the literal sense of the word. This explains the medicinal value of lentils - they are so useful that they simply cannot do any harm.
Lentils are recommended to be eaten in case of nervous disorders, urolithiasis, colitis and ulcers. People with cardiovascular disease should also eat more lentils. And with diabetes, regular consumption of lentils can help lower blood sugar levels.
What's more, lentils help renew blood thanks to their high potassium content. For pregnant women, lentil dishes are just a godsend: fiber regulates stool, and the trace elements it contains (for example, folic acid) contribute to the proper development of the fetus.
In general, with regular consumption of lentils, an increase in the tone of the whole body and a strengthening of immunity are noted. The thing is that when processed in any way, most of the nutrients are retained in lentils. This is what makes it so useful.
Lentils are an indispensable product for those who observe Orthodox fasts, because it is an excellent, very nutritious meat substitute, which is absorbed much faster and easier, since it does not have the fatty components inherent in meat.
However, don't assume that being a legume makes lentils awkward to cook. It doesn't need to be soaked, just rinse and remove the debris. Lentils are prepared, depending on the variety, from 20 to 40 minutes, it is better to salt the dish at the very end. Delicious salads, soups and mashed potatoes are prepared from lentils. They also eat lentil sprouts, which are not inferior in nutritional properties to wheat sprouts.
