Curd muffin recipe
To make curd muffins, you will need:
- 250 g of butter or margarine;
- 300 g of cottage cheese;
- 250 g of granulated sugar;
- 500 g flour;
- 4 eggs;
- ½ cup raisins (seedless);
- 1 lemon;
- ¾ h. L. soda;
- 1 glass of icing sugar;
- 3 tbsp. l. currant juice.
Scald the lemon with boiling water, carefully cut the zest and grate it on a fine grater. Squeeze the juice from ½ lemon. Pass the cottage cheese through a meat grinder, and sift the wheat flour through a sieve.
Remove the butter or margarine from the refrigerator beforehand to soften. Then beat the butter and sugar in a bowl with a whisk or mixer. Add eggs, grated lemon zest and the juice of half a lemon, cottage cheese, raisins, a pinch of salt, flour, and baking soda quenched in lemon juice one at a time. Mix everything thoroughly and knead the dough - in consistency it should resemble sour cream.
Divide the dough into silicone muffin tins, about 2/3 full. Bake in the oven at a moderate temperature (about 180 ° C) for 25-30 minutes. Then remove the baked goods from the oven, carefully remove from the molds and let the muffins cool. Then cover with glaze. To prepare it, mix the icing sugar with currant juice until smooth. Dry the glazed muffins in a warm oven and decorate to your liking.
